It was a regular morning for some. A day filled with plans and projections of where to visit to enjoy the summer holiday. As a matter of fact, some people were in the middle of planning their spring break getaway. Unfortunately, these plans were given an uppercut and perhaps a funeral service of a nature similar to those conducted by the Ghanaian dancing pallbearers led by Benjamin Aidoo. On March 11, 2020, the World Health Organization declared the spread of the Coronavirus a global pandemic. This led most vacationers to say goodbye to travel plans.

Cases of COVID19 continue to raise in some areas but are well under control in some territories. Many of the Caribbean islands where people typically go for vacation are being applauded by the World Health Organization for their success in taming the roar of the Coronavirus in their region. In certain locales across the globe, there still exists strict policies on how business places operate. This has caused a major shift in how people approach outing spots.

Once upon a time, you could tumble out of your bed in the morning and take a slow cruise to your favourite breakfast spot and eat your favourite morning meal. Well, unfortunately, for many areas this is no longer something that is acceptable. In most places, you can only enjoy the services of a restaurant or other entities by contacting the organization ahead of time. This communication might be to place an order that will be delivered or an order that you will be picking up via what is now dubbed “curbside pickup”.

Thankfully, there are still some locations that will permit you to come in and dine or sit at the bar. However, this is limited. Most regions now have rules about how many people can be in one place at the same time. This is all in an effort to be in line with the world’s thrust to minimize the spread of the virus by practising social distancing. According to the Centers for Disease Control and Prevention, in order to practice social distancing, you must be at a minimum of 6 feet away from other persons who are not members of your household. This translates to staying approximately 2 arms’ length apart.

Based on this social distancing protocol, you can easily see why communicating with organizations and making reservations ahead of time has become the new norm. in this time, companies that help with booking and reservations are a very useful resource. Flavours tend to be bold and fresh in West Africa. They use fermented beans, dried fish, and shrimp. These all add levels of savoury goodness when mixed with fresh ingredients for sauces or for your favourite stew.

Food from Africa is very diverse. Even within individual countries, you can find subcultures which have their own unique personality when it comes to preparing meals. Tunisia, Morocco, and Algeria tend to have dishes that are made around couscous and spices like cinnamon and cumin. Food coming out of eastern regions like Ethiopia tend to use grains such as teff and spice blends including berbere.

Cuisine from Kenya or Tanzania includes things such as ugali (maize dumplings) and nyama chomo/mshikaki (tender grilled goat meat). Southern regions produce their own types of dumplings). Cooking from the southern region, where you will find counties like Mozambique and Angola, uses more seafood and spices such as piri piri.

What Is Afro-Caribbean Food?

Most restaurants you find outside of Africa and the Caribbean will typically be a fusion of African food and Caribbean food.  This is referred to as Afro-Caribbean food. This food is simply a mix of the rhythm of the food from the Islands and the vibrance and variety of food from Africa. Afro-Caribbean cuisine typically includes yam, cassava, green banana, green plantains, sweet potatoes, coco, bread, coconut, lentils, rice, seafood, and meat. It usually includes a blend of European, African, Indian, or American recipes.
